Flatbread pizzas are such an easy option for a quick lunch or dinner. I always use pocketless, greek style pitas but naan bread, regular pitas or even tortillas work great. Really, you could pile pretty much anything on the pita and as long as you top it with a generous layer of cheese you are good to go.
Shrimp & Pesto Flatbread Pizza
(serves 2)
Ingredients:
2 pocketless pitas
1/4 cup pesto (recipe to follow)
1/4 cup cheddar
2 tbsp goat cheese
20 pieces of cooked shrimp
2 tbsp bacon bits
2 pocketless pitas
1/4 cup pesto (recipe to follow)
1/4 cup cheddar
2 tbsp goat cheese
20 pieces of cooked shrimp
2 tbsp bacon bits
Directions:
1. Spread pesto evenly across both pitas
2. Top with remaining ingredients
3. Bake at 400 for 8-10 minutes (or until cheese is bubbly)

Simple Pesto
Ingredients:
1 handful of basil
2 tbsp olive oil
1 clove of garlic
2 tbsp pine nuts
1 tbsp Parmesan
Sprinkle of salt
Directions:
1. Pulse all ingredients together in food processor.
