It has been a while since I have shared a recipe with you, so today I want to share a recipe for one of my favourite breakfast foods… muffins! Now if you ask my husband, he will tell you I make WAY too many muffins, but in my mind, there is nothing better to wake up to then a hot muffin… especially one made with good for you ingredients like this apple cinnamon one!
Apple Pecan Oat Muffins
Ingredients:
1 cup oat flour *
1/2 tsp baking soda
1/4 cup sucnat
1 tsp cinnamon
1 egg
1/2 cup unsweetened apple sauce
1/4 cup greek yogurt
1 apple (peeled and chopped)
1/4 cup chopped pecans
Directions:
1. Combine dry ingredients together in a large mixing bowl.
2. Add in egg, applesauce and greek yogurt. Mix together until just combined. Stir chopped apple into batter.
3. Spoon batter into lined muffin tins (ps. parchment paper muffin liners are my favourite because they don’t stick!) and bake at 350° for 20 min.
* You can make your own oat flour by pulsing old fashioned oats in a food processor until they create a fine powder
Nutrition: (per muffin), recipe makes 8
112 Cal, 3.9g Fat, 2g Fiber, 4.6g Sugar, 3.2g Protein

My my! I don't think I have read such ingredient mix for muffins before. I was a little surprised by the greek yogurt. I like to cook/bake also so may give this a try when I find the time. For people who don't like cinnamon, do you have suggestions for a substitute?

Thanks so much for pinning! I would suggest maybe adding 1/2 tsp of nutmeg instead of the cinnamon, or you could perhaps add a pinch of ginger to add a little something extra 😉
