Today I’m sharing a delicious and super simple galette recipe! I love how versatile this sweet pie is, and how fresh fruit really is the star ingredient. Best of all, you can throw pretty much any fruit you have on hand into the filling, so it is a great way to use up fruit that is past its prime. Another favourite combination of mine is filling it with blueberries and sliced plums. What is your favourite kind of pie?
Peach & Cherry Galette
(serves 6)
Ingredients:
3 C flour
2 1/2 C whole wheat flour
3/4 C coconut oil
1 egg plus water to make 1 cup
1 tbsp Vinegar
2 tsp salt

3 peaches
1 cup pitted & halved cherries
1/4 cup cane sugar
1 tbsp corn starch
1/4 cup cane sugar
1 tbsp corn starch
Directions
1. Combine first 6 ingredients using a pastry blender.
2. Divide mixture into 6 portions. Shape into balls, then tightly wrap 5 of the 6 portions in plastic wrap, freezing for another use.
3. Roll out remaining portion as thin as possible onto parchment paper.
4. Mix remaining 4 ingredients and pile into centre of pie crust. Fold edges over to keep filling inside.
5. Bake in 375 degree oven for 35 minutes.

I love peach and cherry perfect combination. I will have to try this out, I would increase the fat content however by adding cream and icecream. Well of your going to be bad you may as well be very bad Lucy x
